Toscana Soup

Toscana Soup

ONE FAMILY
3/4 c. onions, dice
4-5 slices bacon, cooked and diced
1 1/4 tsp garlic
1 oz chicken bouillon
1 quart water
2 med potatoes
2 c. kale
1 1/2 c sausage link
3/4 c. heavy whipping cream

To Freeze:
Cook sausage and slice.  Cook bacon and dice.  Dice onions, place in pan with bacon and saute until tender, add garlic. Slice potatoes and blanch.  Place whipping cream into small bag. Place all ingredients into large bag, omitting water.

To Eat:
Add all ingredients into crock pot or large pot on stove top.  Cook until heated through.  Add whipping cream just before serving.

Pasta Fagioli Soup

Pasta Fagioli Soup

ONE FAMILY
1 lb ground beef
1 small onion, chopped
1 c. grated carrots (2 large carrots)
1 c. diced celery
1 15 oz diced tomatoes
1 15 oz kidney beans
2 15 oz cans beef broth (or sub with bouillon)
1 tsp oregano
1/2 tsp pepper
2 tsp parley
1/2 tsp hot sauce (Tabasco)
16 oz prego
1 small bag shell pasta

To Freeze:
Brown beef, chop onion, grate carrots, dice celery, chop parsley.  Place all ingredients into large bag, make sure to drain beans. Place pasta in pantry.

To Eat:
Thaw and place all ingredients into pot or crock pot and simmer until pasta is cooked.  If using crock pot, do not add at the beginning but last 30-45 min.

Southwestern White Chili

Southwestern White Chili

ONE FAMILY
4-6 chicken breasts, cooked/cubed
1 c. chopped onion
1-2 4 oz can green chilies
3 cans white kidney beans
1/2 tsp cilantro (opt)
1/4 c. olive oil
3 c. chicken broth (or sub with bouillon)
3 cloves garlic, crushed
3 tsp cumin
1 1/2 tsp oregano
1/2 tsp ground red pepper
2 1/2 c. Mozzarella cheese

To Freeze:
Cook chicken and cube. Place all ingredients into large bag, cheese into separate bag. May add beans if wish, make sure to drain the cans.

To Eat:
Place ingredients into crock pot and cook on low 4-6 hours, or on stove top.  Heat through and serve with cheese on top.  If used bouillon, add 3 c. water.

Taco Rice Salad

Taco Rice Salad

ONE FAMILY
1 lb ground beef
1 garlic clove, minced
3 c. yellow rice ( or 1 box)
1 tsp cumin
1 tsp chili powder
1 /4 tsp salt
1/4 tsp pepper
1 c. frozen corn
1 15 oz black beans
1 c. shredded cheese
lettuce (typically on hand)

Dressing:

2/3 c. sour cream
2/3 c. picante salsa
1 tsp chili powder
1/2 tsp cumin

To Freeze:
Brown beef with garlic, add in cumin, chili powder, salt and pepper and place in large bag.  Make dressing and place in bag, then add to large bag.  Place cheese in small bag, also add into large bag.

To Eat:
Thaw meat, heat up on stove.  Cook rice and add into beef.  Cook corn and cool slightly.  May toss lettuce, beans, cheese, and corn with dressing, or just layer and eat as you like.

18 eggs
1 lbs sausage
2-4 c. cheddar cheese
2-4 c. pepperjack cheese
24 tortillas
hashbrowns
salt & pepper

To Freeze:
You really can add whatever you want into these and stuff as you wish.  Cook eggs, sausage, hashbrowns and mix together.  Place in tortilla, roll, then roll into foil.  Place in baggie.  How much you stuff and add depends on how many you will end up with.

To Eat:
Thaw and heat in microwave or oven until cooked through.  You can also just put in oven frozen and cook lower and slower if you want.

Beef Stew

ONE FAMILY
1 lb ground beef, or stew meat
1.5 lbs potatoes, diced
3 carrots, sliced
1 onion, diced
1 garlic clove, minced
1 6 oz can tomato paste
2 c. water
1 tsp salt
1/4 tsp pepper
1 tsp onion powder
1 tsp dried oregano

To Freeze:
Brown meat, or place raw stew meat in baggie with garlic, onion powder, oregano, salt & pepper.  Dice or slice ingredients (potatoes carrots, onion), blanch potatoes and place in bag, then place meat bag into veggie bag.

To Eat:
Place all ingredients into slow cooker, add, 2 c. water, 6 oz tomato paste and cook on low 6-7 hours.  If using raw stew meat, cook until done.

Baked Tacos

ONE FAMILY

2 lbs ground beef
1 can refried beans
15 oz tomato sauce
1 pkg taco seasoning
1-2 c. shredded cheese
18-20 taco shells

To Freeze:
Cook/brown beef, cool, place in bag.

To Eat:
Thaw meat, heat on stove, adding tomato sauce (15 oz), 1 can refried beans, and taco seasoning. Spoon mixture into taco shells and place in 9x13 pan, sprinkle with cheese and bake at 400 x 10-12 minutes.
On hand: toppings (sour cream, tomatoes)  Pantry: taco shells, 15 oz tomato sauce, 1 can refried beans, taco seasoning packet
